Thai Mussels
Ingredients

2 Tbsp Olive Oil

1 Shallot, finely chopped

3 Garlic Cloves, finely chopped

1 stalk Lemon Grass, trimmed and finely chopped

1 Tomato, sliced julienne

1 Cup Unsweetened Coconut Milk

1kg Fresh Mussel

½ Lemon Zest

1 Tsp Lemon Juice

Pinch of Chilli Flakes

Fresh Parsley, finely chopped
Instructions
Step 1:
Heat the oil in a large saucepan.
Step 2:
Add the shallots, garlic, lemongrass and pinch of chilli. Mix and cook over medium heat.
Step 3:
Add the coconut and mussels.
Step 4:
Once opened from the heat. Stir in the lemon juice.
Step 5:
Serve the mussels in two plates and pour the liquid over them. Garnish with parsley, lemon zest and tomatoes.
