Gnocchi Gamberi e Pistacchio
Ingredients

1 pkt Gnocchi

700grm Fresh Prawns

40grm Butter

200grm Cherry Tomatoes

50 ml White Wine or Veg Stock

400ml Tomato Salsa

100grm Baked and Chopped Pistachios

Fresh Basil

Parmesan Shavings

Salt and Pepper
Instructions
Step 1:
In a boiling pan cook the gnocchi according to packet instructions.
Step 2:
Heat a large pan. Add the olive oil and saute the garlic. Add the prawns. Only half cook the prawns, remove and set aside.
Step 3:
Fry cherry tomatoes in the same pan, and add the white wine and the tomato sauce. Sprinkle some salt and pepper.
Step 4:
Add the cooked gnocchi and prawns to the sauce. Add the butter and slow cook for another 3 minutes.
Step 5:
Serve with chopped basil, pistachios and parmesan shavings.
